According to the Organic Trade Association organic coffee is coffee grown using methods and materials that have a low impact on the environment. Systems that use organic production replenishes the soil’s fertility and the reduction of toxic pesticides and fertilizers help maintain the fragile agriculture.  Growing coffee and other things organically promotes a natural development of disease and pest control. Much of the organic coffee grown is shade grown and to have shade you must have trees so the forest is preserved. Since the trees and forest are preserved there is less soil erosion thus preserving habitat especially for birds. The leaves from the extra trees and the bird droppings will naturally fertilize the soil. Another advantage is that the birds control pests by eating the insects that feed off the leaves of coffee plants.
